So, what’s this dish all about? It’s a mildly spiced prawns stew made with coconut milk, usually served along with Appam (pancake made with fermented rice batter and coconut) or bread or Rice string hoopers(Idiyappam - a rice noodles made at home)

This dish is creamy and rich …Kerala cuisine is known for its spiciness.. 🌶 ,especially any non vegetarian dish..
Prawns or fish moliee stands out for its mild and creamy taste,with Low spice level..green chillies and pepper keeps the spiciness subtle,while coconut milk makes it creamy and rich.The curry leaves provide an heavenly aroma .
The story of the dish goes back a few centuries ,when Portuguese were expanding their colonies in India,and Kerala was one of their main ports.They introduced a lot of vegetables and dishes to Indian cuisines…Story says,since Portuguese couldn’t handle the spiciness of kerala cuisine,they explored options and since coconut was abundant in Kerala,coconut milk was used in the curries which made the dishes mild.
Fish moliee or prawns Moliee was named after the cook - a lady named Molly,who first made the dish.

Ingredients and spices that need to be Take to make Prawns Moilee:

  1. Prawns 400 gms (frozen and cooked prawns or shrimp meat.)
  2. Marination
  3. Lime juice of 1 big lemon
  4. 1/2 tsp salt
  5. 1 tsp black pepper powder
  6. 1/4 tsp turmeric powder
  7. Ingredients for cooking
  8. Garlic cloves,peeled and crushed 5 big cloves
  9. Ginger 1 tsp grated((I recommend grated ginger,since we won’t bite in to chunky pieces,and many don’t like the taste)
  10. Green chillies 5 - 6 numbers,each slit into half (can increase or decrease based on required spiciness)
  11. Onion 1 medium sized,sliced
  12. Turmeric powder 1 /4 tsp
  13. Salt 1/2 tsp(or as per needed)
  14. Coconut milk (250 ml -thick milk,and 250 ml lite milk)
  15. Fresh curry leaves 1- 2 sprigs
  16. Oil (as required) coconut oil is recommended,else sunflower oil.(don’t use olive oil,from experience I have noted that there is a taste difference)

Instructions to make to make Prawns Moilee

  1. Marinate the prawns with lime juice,pepper powder,salt and turmeric for 1 - 2 hrs
  2. Shallow fry the prawns in coconut oil,since I. Used already cooked prawns,I sautéed the same in oil for 2- 3 minutes.Keep it aside
  3. In a separate pan (clay pot is the best if available),add oil and heat on medium flame.Add garlic,ginger,curry leaves and green chillies.Sauté till it turns aromatic.
  4. Add the sliced onions and sauté the onion till it turns translucent.Donot lett he onions turn brown.
  5. Add turmeric,and saute till raw smell goes.(for 1/2a minute to one minute)
  6. Add lite coconut milk and sir in one direction to mix well.Close the pan and allow to boil for 5 - 6minutes on medium to Low flame.If using clay pot always keep in Low flame since the temperature retention of clay pot is higher.
  7. When oil starts to separate,reduce the flame.
  8. Add fried prawns,mix well,to cover the prawn with the gravy awhile stirring in one direction.allow the curry or gravy to blend well and bring to boil in Low flame
  9. Add thick coconut milk and cook in Low flame for 2minutes.Don’t boil the dish beyond this.Check for seasoning.
  10. Add more curry leaves,also while testing the seasoning,if tanginess is needed further add sliced tomatoes and close the lid,switch off the stove.tomatoes has to be cooked in the steam.
  11. Serve with bread,naan,chapati or rice
  12. Can replace prawns with fish too..but shallow fry fish and dont use spoon to stir after adding to the curry,always rotate the pan to mix the gravy well.
